Taco Tuesday: Thai Chicken Tacos

After a long, fun, exhausting holiday weekend today did not feel like Tuesday. It felt like one of the most stressful Mondays ever. The good news is that it was not in fact Monday, it was Taco Tuesday and I was feeling ambitious!
Chicken:
2 chicken breasts
1/3 c rice vinegar
1/3 c soy sauce
1/3 c fish sauce
2 tbsp ginger
2 tbsp sriracha
2 garlic cloves

Boil chicken until cooked through. Cut into small pieces, add ingredients and let simmer on low/medium heat until liquid has mostly dissolved. *At this point I felt like the chicken was pretty salty so I added about a cup of water and let it simmer for a bit longer. You could probably avoid this by lessening the measurements of each item, maybe 1/3 to 1/4 cup.

Peanut sauce:
3 tbsp natural peanut butter (I use crunchy)
1 1/2 tbsp brown sugar
1 tbsp fish sauce
1 tbsp lime juice
1 tsp ginger
1 tbsp soy sauce
1 clove garlic

Add all ingredients to a pot, simmer and mix until all ingredients have melded together well.


Pro tip: Make a a huge mess while you cook, no one cares and I think it helps the creative juices flow ;)


Heat up tortillas and serve up as you please! Recommended toppings: cilantro, green onions, shredded carrots.
